My Aunt Emma always had rice krispie treats for my brother, sister, and I whenever we’d go to her house. My brother would sneak into the kitchen, climb onto the counter, and gobble them down. It became a tradition, and we were always mad at him for it.
Aunt Emma didn’t just follow the box recipe. Oh no, she’d grab her rain bonnet and walk to the store for extra butter because she didn’t have a car. To this day, I make my dear aunt’s version of this childhood favorite with all of the fondness she inspired.
This particular version is great for St. Patrick’s Day, but my vote is for any day! I mean, who doesn’t LOVE LUCKY CHARMS?
Ingredients
- 16 tbsp. butter
- 1 tsp. vanilla
- Green food coloring
- 2 bags large Kraft marshmallows
- 8 cups Lucky Charms
- 8 cups Rice Krispies
Instructions
- Melt the butter over medium heat. Add the marshmallows and stir well until melted. Remove from heat. Stir in the vanilla. Add a few drops of green food coloring. Keep adding until you get the color you want.
- Add the cereal and stir. Place in two 9x13 baking pans. Wet fingers with cold water and press down. Cool and cut.
